Miles Tamboli is rolling out a new look and a new menu with his first brick-and-mortar restaurant, Tamboli’s Pasta & Pizza. He brings to the restaurant scene his experience as both a farmer and a farmers market vendor of homemade pastas and sauces. In fact, his experience as a farmer prompted him get PGF-certified in time for his grand opening!
“My background is farming: small-scale, local, poison-free farming, so my worldview is based on the idea of little waste,” says Tamboli. To that end, he is committed to paying employees well, sourcing locally whenever possible (check out this incredible list of farms and friends supplying his ingredients), composting, recycling, and even cleaning tables with non-toxic sprays created by another local business.
Equally important to Tamboli are the impeccable flavor profiles on the menu. Whether you’re there for the wood-fired pizzas or some of that dreamy pesto or a surprising take on salad, you’ll find something to love. And you can feel good about supporting someone who supports our community in so many ways.
“What it comes down to for me is trying to run a business that is somewhat responsible,” Tamboli says. “With any business, there should be an expectation of doing things the right way. The stuff we buy, sell and throw away reflect that.”
